Date Filled Cookies

Nothing could go wrong with preparing these delicious-filled cookies for your loved ones. They are primarily prepared as desert, with less sugar and a delicious taste. 

They are perfect for celebrating Eid and the end of Ramadan. So what do you need to make these mouth-melting date-filled cookies?


Steps for Preparation

Step 1 - Mixing

Using a large bowl, mix semolina flour, sugar, yeast and ¼ cup plus 1 tablespoon of all-purpose flour. Add melted butter and use your fingers or a hand mixer machine to mix. When it's completely mixed, add orange blossom and rose water and continue mixing until it's smooth and elastic. The result is dough. Add flour on the surface, cover it with a damp cloth, and leave it for 1 and a half hours.

Step 2 - Date Filing

Mix date paste and cinnamon in a small bowl. Stir the mixture as you add small bits of butter. The result should be a smooth and soft paste. Extract small amounts of the paste and make round shapes of the paste( 3.5cm diameter and 6mm thick). Transfer the round-shaped paste to a plate and repeat the process for the rest. Cover the disk shape paste with plastic paper when you are done.

Step 3 - Covering Date Disk with Dough

Use small pieces of dough to cover the round-shaped date paste, ensuring that the dough covers it entirely. Lightly press the cookie into a mold; this helps you acquire a smooth surface. Place the wrapped cooking into a silicone baking mat and repeat the process with the remaining.

Step 4 - Baking

Heat your oven to 400 degrees and let the cookies bake until golden brown. After 15-18 minutes, remove the cookies from the oven, transfer them to a wire rack, and let them cool.

Chocolate-Covered Date Recipe

This recipe is an excellent option if you don't want to spend many hours in the kitchen. The chocolate-covered dates are the easiest to prepare.


Steps for preparation

Step 1 - Date Filling

Cut the dates halfway to the middle and put your creamy peanut butter in the cut sections using a spoon.

Step 2 - Covering Date with Chocolate

In a small bowl, melt the chocolate using a microwave/ stove or a double boiler. Dip your dates into the melted chocolate using a long toothpick. When it's fully covered, remove it and allow the excess chocolate to drip off and place it on a paper-lined baking tray. Repeat the process with the remaining dates.

Step 3 - Refrigerating

Place your chocolate-covered dates in a refrigerator, allow them to cool for 5-10 minutes, and serve them to your loved ones. Don't forget to put the dates in an airtight container if the dates are in excess.
